Not Alone
I do not like this by itself. However, paired with another cheesecake (TFA w/ graham or etc) it's great in boosting up the filling part of the cheesecake. 1-2%

The Perfect Compliment to Dessert mixes
I've been using this one for nearly 5 years. The only other I like, is LorAnns. Each, Capella's and LorAnns. Have their place in my mixes. Capella's, to me. Is more along the lines of an Every Day typs cheesecake flavor. It's eggy, creamy and has that nice Cre'me fresh/ Sour cream note. Lorann's is more of a gourmet cheesecake. Smooth and mellow. Anyhow, about Capella's. This is the flavor that makes my Vanilla Custard recipes Pop. As a compliment flavor. I use it 0.5% to 1%. It adds a fantastic cream and eggy note. And it works the same with most other similar mixes. It puts some nice mouth feel and rich notes to milk shake mixes. Adds body and back note flavor to Custard, Pudding and fruit pie mixes. This is one I am NEVER with out. As a main flavor. I have not had to go above 5% to get everything this flavor can deliver. I do recommend giving this and others like it at least 20 days steep, to appreciate the flavor and harmony Capella's NY Cheesecake can do for your mixes.

Almost Perfect
Caps NY Cheesecake is my second favorite cheesecake flavoring. If you don't want to drop the money on LorAnn's. Get Capella's. It's just Good Stuff! Has that real Cheesecake flavor for sure.

Used to be a tobacco flavor junkie
I used to love tobacco flavors until I started diy'ing stuff like custards and cheesecakes. NY Cheesecake lays down the perfect base flavor for strawberry, banana, blueberry etc. You get a sweet mix, but the cheesecake gives it a nice earthy, creamy foundation. I like this stuff better than TFA's cheesecake graham but it's all a matter of preference. Buying a 4oz bottle next time :)
