    be careful!

Posted by Unknown on 20th Jul 2017

I give this 3 stars and I'd have given it 5 if I'd have reviewed it a few days after my first test. It was divine, thick, creamy, slight cheese note. Then after about 7-8 days into a steep, BAM, full rancid cheese. This is due to the butyric acid. So do NOT use this above 2% ish. I used it at 4%. Needs to be coddled with other cheesecake ingredients like cream and base.

Great with fruits like strawberry, cherry and blueberry. Benefits from a good week or so of steeping.
